Irish Potato Soup

  1. Melt butter or margarine
  2. in
  3. heavy
  4. pan over low heat. Add onions, stirring
  5. until
  6. tender.
  7. Add potatoes, water, and salt. Cover pan and
  8. cook
  9. until potatoes are tender.
  10. Drain, reserving liquid.
  11. Press
  12. potatoes
  13. through
  14. sieve
  15. and add to liquid.
  16. Add hot milk and
  17. stir
  18. well.
  19. Combine
  20. cold milk and beaten egg yolk. Add
  21. slowly to warm soup, stirring constantly.
  22. Add cayenne pepper.
  23. Reheat soup slowly, but do not boil. Add parsley just before serving.
  24. Yield:
  25. 6 to 8 servings.
