Zucchini Bars
- 1/2 c. cooking oil
- 1 1/2 c. brown sugar, packed
- 2 Tbsp. water
- 1/4 tsp. nutmeg
- 1/2 c. whole wheat flour
- 1 tsp. baking soda
- 1 c. shredded coconut
- 2 1/2 c. zucchini, grated and drained
- 1/2 c. margarine, melted (optional)
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 c. flour
- 1/3 tsp. salt
- 1 c. seedless raisins
- 1 1/2 c. bran cereal buds
- Mix melted margarine, oil and sugar.
- Beat eggs and combine with water, vanilla and nutmeg.
- Add to sugar mixture, presifted flour, salt and baking soda and add to mixture.
- Stir in remaining ingredients.
- Pour in buttered jelly roll pan, 16 x 11-inch.
- Bake at 350u0b0 for 30 to 35 minutes.
- Cool before cutting.
