Ridiculously Easy Dessert

  1. Preheat oven to 350u0b0.
  2. Spray a 9-inch round cake pan with Pam or Baker's Joy.
  3. In a blender or food processor, puree beans, 1/3 cup sugar and rum and vanilla until smooth.
  4. Add apple fiber and puree.
  5. If the mixture seems dry, add 2 to 3 tablespoons water to make a thick batter.
  6. Beat egg whites until stiff, then gradually beat in the remaining 1/3 cup sugar.
  7. Fold gently into the bean-and-fiber mixture.
  8. Spoon into prepared cake pan; bake for 50 minutes or until a toothpick, when inserted into center of cake, comes out dry.
