Godfather Meat Loaf
- 2 lb. lean ground beef
- 2 eggs, beaten
- 1 (8 oz.) can Ro-Tel chillies and tomatoes
- 3/4 c. Italian bread crumbs
- 3 cloves garlic, chopped
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 thin slices boiled ham
- 6 slices Mozzarella cheese
- 1 c. Ragu Italian sauce
- In 2-quart batter bowl, combine ground beef, eggs, Ro-Tel chillies and tomatoes, bread crumbs, garlic, salt and pepper.
- On large piece of wax paper, flatten meat mixture into rectangle. Arrange ham on top of meat, leaving 1-inch margin around edge. Place slices of cheese over ham slices.
- Carefully roll up meat, using wax paper to lift.
- Seal edges.
- Place roll, seam side down, in microwave ring mold or on microwave roasting rack.
- Microwave on 70% power for 25 to 30 minutes or until done.
- Place meat loaf on microwave-safe serving platter.
- Pour Ragu sauce over top. Microwave on 80% power for 1 to 2 minutes or until hot.
- Let stand for 5 minutes before serving.
