Chili
- 2 lb. pinto beans
- 1 (32 oz.) can stewed tomatoes
- 1 medium onion, chopped
- 4 large cloves garlic, crushed
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. ground red pepper
- 2 lb. elk burger or hamburger
- 1 (16 oz.) can tomato sauce
- 2 Tbsp. chili powder
- 1 tsp. cumin powder
- few shakes Tabasco sauce
- Cover beans with water and soak overnight.
- Drain water and cover with fresh water to an inch or so over beans.
- Add tomatoes, onion and garlic.
- Bring to boil, turn to medium-low heat.
- Cook until beans are almost done (adding water if needed).
- Add rest of spices.
- Brown meat, drain and add to beans.
- Add tomato sauce and simmer for 2 to 3 hours, stirring occasionally.
