Zucchini Bread
- 3 eggs
- 1 c. oil
- 1/2 c. brown sugar
- 1 c. white sugar
- 2 tsp. vanilla
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 3 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. nutmeg
- 1 tsp. salt
- 1 Tbsp. lemon juice
- 2 c. flour
- 2 c. grated zucchini, not peeled
- 1 c. raisins (optional)
- 1 c. nuts (optional)
- Combine eggs, oil and sugars.
- Add vanilla, baking powder, baking soda, cinnamon, cloves, nutmeg and salt.
- Mix well.
- Add lemon juice.
- Mix.
- Add flour and mix.
- Add zucchini, nuts and raisins.
- Beat for 2 minutes.
- Grease and sugar two 9 x 5 x 3-inch loaf pans.
- Pour batter evenly into both pans.
- Bake at 350u0b0 for 1 hour.
