Pumpkin Cheese Torte
- 1/2 c. pecans
- 2 Tbsp. sugar
- 1 c. ginger snap crumbs (about 20 cookies)
- 5 Tbsp. melted sweet butter
- 1 lb. cream cheese, at room temperature
- 2/3 c. packed dark brown sugar
- 1/2 c. sour cream, at room temperature
- 1 c. solid packed pumpkin
- 3 eggs, at room temperature
- 1 tsp. cinnamon
- pinch each: ground cloves and ground ginger
- peach halves for decoration
- Preheat oven to 325u0b0.
- Put pecans and sugar into processor and process until finely chopped.
- Add cookies or crumbs and melted butter; blend well to create mixture for crust.
- Press into bottom and up approximately 1-inch of 10-inch spring mold pan to form crust.
- Bake 10 minutes.
