Banana Spice Loaf
- 1 c. sifted all-purpose flour
- 1 c. unsifted white wheat flour
- 3 Tbsp. sugar
- 2 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1/4 c. margarine
- 2 medium bananas, peeled and mashed (1 c.)
- 1/2 c. buttermilk
- 1 large egg
- 1 tsp. vanilla extract
- Preheat oven to 350u0b0.
- Lightly grease with spray 9 1/4 x 5 1/4 x 2 3/4-inch loaf pan.
- In large bowl combine flour, whole wheat flour, sugar, baking soda, cinnamon and nutmeg.
- Melt margarine in a small saucepan.
- Pour into bowl and whisk together with bananas, buttermilk, egg and vanilla.
- Add to flour mixture and stir until dry ingredients are moistened.
- Spoon batter into pan.
- Bake for 50 minutes.
- Place pan on a rack and cool for 10 minutes.
- Remove loaf from pan.
