Oatmeal Chocolate Chip Cake
- 1 3/4 c. boiling water
- 1 c. uncooked oatmeal
- 1 c. packed brown sugar
- 1 c. sugar
- 1/2 c. margarine, softened
- 1 3/4 c. all-purpose flour
- 3 eggs
- 1 Tbsp. baking cocoa
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 c. chocolate chips, divided
- 3/4 c. chopped walnuts (optional)
- In a mixing bowl, pour water over oatmeal. Let stand for 10 minutes. Add sugars and butter, stirring until butter is melted. Add eggs one at a time, beating well after each addition. Sift flour, cocoa, baking soda and salt together. Add to batter; mix well. Stir in half of the chocolate chips. Pour into a greased 9 x 13 baking pan. Sprinkle walnuts and remaining chips on top. Bake at 350u0b0 for 40 minutes or until toothpick inserted near center comes out clean.
