Spinach Stuffed Shells
- 24 jumbo macaroni shells
- 1 (32 oz.) jar spaghetti sauce with mushrooms
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 2 c. Ricotta cheese
- 2 c. (8 oz.) shredded Mozzarella cheese
- 1 small onion, diced
- 1/2 c. Parmesan
- 2 Tbsp. chopped fresh parsley
- 1 tsp. oregano
- dash of hot sauce
- dash of ground nutmeg
- Cook shells; drain and set aside.
- Spoon 1 cup spaghetti sauce into lightly greased 13 x 9 x 2-inch baking dish.
- Combine next 9 ingredients; mix well.
- Stuff each shell with 1 1/2 tablespoons spinach mix and arrange in dish.
- Spoon remaining sauce over shells.
- Sprinkle with 1/4 cup Parmesan cheese.
- Cover and bake at 350u0b0 for 30 to 40 minutes.
