Crisp Homemade Granola
- 2 1/4 c. quick oats
- 3/4 c. flaked coconut
- 3/4 c. chopped nuts
- 4 Tbsp. margarine
- 1/4 c. brown sugar (packed)
- 1/4 c. honey
- 1 1/2 tsp. vanilla
- 1/2 c. wheat germ
- Heat oven to 300u0b0.
- Grease large jelly roll pan.
- Spread oats, coconut and nuts on pan.
- Toast in oven 20 minutes, stirring occasionally.
- Melt butter.
- Add sugar and honey to margarine. Heat until blended.
- Stir in vanilla. Remove oat mixture from oven; sprinkle wheat germ over oats.
- Stir with fork.
- Increase oven temperature to 350u0b0.
- Drizzle sugar mixture over oats, stir until coated evenly.
- Bake 5 minutes.
- Stir with fork.
- Press in pan with the bottom of a cup until firm and flat.
- Bake 3 to 5 minutes longer.
- Cool, break in pieces and store in airtight jar.
