Beef With Onions

  1. Cut
  2. meat
  3. across
  4. thetrain
  5. into
  6. thin finger-length strips.
  7. Peel
  8. onions;
  9. slice
  10. crosswise
  11. and
  12. separate rings. Heat the
  13. butter
  14. and oil in skillet;
  15. add the onion rings and cook, covered,
  16. over
  17. a low heat until transparent.
  18. Turn them over frequently
  19. so
  20. that
  21. they cook evenly, but do not brown. Remove from
  22. pan.
  23. Increase heat.
  24. Put strips of meat into pan and brown
  25. them.
  26. Return onion rings.
  27. Sprinkle with flour and stir. When
  28. flour
  29. begins to color, stir in broth, peeled and crushed garlic, cumin, marjoram, wine vinegar and seasonings. Cover and simmer for 1 hour.terve with potatoes or rice and a crisp mixed salad.
