Zucchini With Beans And Tomatoes
- 3 Tbsp. olive oil
- 3 zucchini, trimmed and cut into chunks
- 1 onion, chopped
- 3 garlic cloves, chopped
- 1 1/4 c. canned plum tomatoes with their juice
- 2 tsp. thyme
- 4 basil leaves, torn into small pieces
- 1 can Great Northern white beans, drained
- 1/2 c. grated Parmesan cheese
- salt and pepper to taste
- Heat oil in skillet.
- Add zucchini.
- Saute over medium heat until lightly browned and remove from pan.
- Add onions and garlic and cook slowly for 4 minutes.
- Stir in tomatoes and bring mixture to a simmer.
- Stir in the thyme, basil, beans and zucchini.
- Cover and simmer 5 to 7 minutes.
- Place in baking dish.
- Add cheese on top.
- Place under broiler to lightly brown, about 1 minute.
- Serve hot.
