Zucchini With Beans And Tomatoes

  1. Heat oil in skillet.
  2. Add zucchini.
  3. Saute over medium heat until lightly browned and remove from pan.
  4. Add onions and garlic and cook slowly for 4 minutes.
  5. Stir in tomatoes and bring mixture to a simmer.
  6. Stir in the thyme, basil, beans and zucchini.
  7. Cover and simmer 5 to 7 minutes.
  8. Place in baking dish.
  9. Add cheese on top.
  10. Place under broiler to lightly brown, about 1 minute.
  11. Serve hot.
