Mushroom Lasagna
- 4 large ripe tomatoes, chopped
- 2 large onions, chopped
- 1/2 c. celery, chopped
- 1 tsp. sugar
- 1 tsp. salt
- 1/2 tsp. oregano
- 1/2 tsp. paprika
- 1 (6 oz.) can tomato paste
- 1/4 tsp. dried basil
- 1 large bay leaf
- 1/4 tsp. pepper
- 1 lb. mushrooms, rinsed, trimmed and sliced
- 8 lasagna noodles
- 3 c. sauce (above)
- 1 egg
- 8 oz. Mozzarella cheese
- 1/2 c. Parmesan cheese
- 16 oz. cottage cheese
- Cook noodles according to package directions.
- Beat egg and stir in cottage cheese.
- Grease a 12 x 8-inch baking dish and line with a layer of noodles.
- Cover noodles with half of cottage cheese mixture.
- Then layer sauce, Mozzarella cheese and Parmesan cheese.
- Repeat layers.
- Bake at 350u0b0 for 40 minutes.
