Oatmeal-Raisin Breakfast Cookies
- 3/4 stick oleo
- 3/4 c. all-purpose flour
- 3/4 c. old fashioned oats
- 3/4 tsp. cinnamon
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- pinch of salt
- 1/2 c. packed brown sugar
- 1 large egg
- 1/2 c. dark seedless raisins
- Heat oven to 350u0b0.
- Melt butter and pour into a small bowl to cool.
- Grease a cookie sheet.
- Pour oats, flour, cinnamon, baking powder, baking soda and salt into a large bowl; stir to mix well. Add sugar and egg to oleo; whisk smooth with fork or wire whisk. Pour over flour mixture and stir to mix well.
- Drop by heaping tablespoonfuls of batter onto greased cookie sheet, leaving 2 inches between each cookie.
- Bake 10 to 12 minutes until cookies are lightly browned.
- Let cool a minute or so, then transfer to wire racks to cool.
- Makes 12 large cookies.
- These are a great treat for breakfast or anytime.
