Sweet Potato Biscuits
- 1 c. mashed sweet potatoes
- 2 Tbsp. dark brown sugar
- 1/2 c. melted unsalted butter
- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- dash of ground nutmeg
- 1/2 tsp. baking soda
- 3/4 c. buttermilk
- Beat together the sweet potatoes, sugar and butter until well blended.
- Sift together flour, baking powder, cinnamon and nutmeg. Dissolve baking soda in buttermilk.
- Add dry ingredients and buttermilk to potatoes.
- Mix until soft dough is formed.
- Do not overbeat.
- Place dough on floured surface and roll out to 1/2-inch thick.
- Cut out with a biscuit cutter and place on ungreased cookie sheet.
- Bake at 400u0b0 for approximately 20 minutes or until lightly browned.
- Cook on wire rack.
- Makes two dozen.
