Light Yeast Biscuits
- 1 pkg. dry yeast
- 2 Tbsp. warm water (95~)
- 2 Tbsp. sugar, divided
- 2 1/2 c. all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. butter or margarine, softened
- 1 c. warm buttermilk
- vegetable cooking spray
- In a small bowl, dissolve 1 tablespoon sugar in the warm water, then add yeast.
- In a large bowl, combine the remaining 1 tablespoon sugar, flour, baking powder, baking soda and salt. Using a pastry blender or two knives, cut butter into dry ingredients until mixture resembles coarse cornmeal.
- Add buttermilk and yeast mixture to dry ingredients and stir until a soft dough forms.
- Turn onto a lightly floured surface and knead 4 minutes or until dough becomes smooth and elastic.
- Place in a large bowl; spray with cooking spray, turning once to coat top of dough.
