Brian Bailey'S Chocolate Cheese Cupcakes
- 8 oz. cream cheese
- 1/8 tsp. salt
- 1 egg
- 1/3 c. sugar
- 6 oz. chocolate chips
- 1 1/2 c. flour
- 1 tsp. soda
- 1/2 tsp. salt
- 1/4 c. cocoa
- 1 c. water
- 1 Tbsp. vinegar
- 1/3 c. oil
- 1 tsp. vanilla
- Cream together and set aside the cream cheese, 1/8 teaspoon salt, egg, sugar and chocolate chips.
- Mix flour, sugar, soda, 1/2 teaspoon salt and cocoa.
- Mix well and add water, vinegar, oil and vanilla.
- Mix well and spoon into cupcake papers 1/3 full.
- Drop 1 teaspoon of the cheese mixture (that was set aside) on top of the cake mixture.
- Bake for 35 minutes in a 350u0b0 oven.
- Remove if cheese mixture on top of cupcakes goldens before time is up.
- Serve cool.
