Gazpacho Salad

  1. In a glass jar, arrange alternate layers of cucumbers, carrots, bell peppers, onion and tomatoes.
  2. Lightly sprinkle each layer with salt and pepper and scatter the black olives and rolled anchovies over the vegetables.
