Country Captain

  1. Saute onions, garlic and bell pepper in olive oil.
  2. Add tomatoes, cook 5 minutes.
  3. Add rest of ingredients (spices and seasonings).
  4. Cook 10 minutes.
  5. Add chicken.
  6. Transfer to a casserole and bake, uncovered, in 350u0b0 oven for 45 minutes.
  7. Add soaked currants and almonds.
  8. Serve with or over rice.
  9. Can freeze.
