Tijuana Torte
- 2 lb. ground beef
- 1 medium onion, chopped
- 1 (16 oz.) can stewed tomatoes
- 1 (8 oz.) can tomato sauce
- 1 (4 oz.) can green chili peppers, diced
- 1 pkg. taco seasoning mix
- 4 large flour tortillas
- 1 lb. Cheddar cheese, grated
- 1 1/2 c. sour cream
- 1/2 c. grated cheese (for topping)
- Brown ground beef and onion; drain.
- Add stewed tomatoes, tomato sauce, chili peppers and taco seasoning mix.
- Simmer mixture for 10 to 15 minutes.
- In a 9 x 13-inch pan, place 1/2 of the meat.
- Cover with 2 tortillas and 1/2 of the pound of grated cheese.
- Continue with meat mixture, tortillas and cheese.
- Spread sour cream on the top of the casserole; sprinkle with 1/2 cup grated cheese.
- Bake at 350u0b0 for 25 minutes, or until bubbly. Serves 8.
