Easily Vegan Date Loaf

- 12 dates, soaked
- 1 1/8 cups flour
- 2/3 cup sugar
- 1 teaspoon cinnamon, heaping
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons chia seeds
- 1 teaspoon flax seeds
- 2 eggs (or 2 egg replacers)
- 1/2 cup milk (or almond/non-dairy milk)
- 1/2 cup vegetable oil
- Streusel
- 1/3 cup oats
- 2 teaspoons flour
- 1/3 cup brown sugar
- 1 tablespoon honey
- Soak dates for 15 minutes.
- Preheat oven to 350 F. Grease loaf pan.
- In a large bowl, mix flour, sugar, cinnamon, chia, flax, baking soda, and salt. Chop up dates finely and add them to the mix.
- Add eggs, then add milk and oil. Mix until just combined.
- Mix together streusel ingredients. The mixture should be dry and crumbly.
- Pour batter into loaf pan and sprinkle streusel on top. Bake for 42-45 minutes or until golden brown and toothpick inserted into center comes out clean. Let cool before glazing, or eat as is. Enjoy!
