Bbq Peach And Chicken Bake

  1. In a medium sized saucepan over medium heat, saute the onions and garlic in the olive oil until softened but not browned.
  2. Transfer to a food processor, add the peaches and remaining ingredients and puree until smooth. Return the mixture to the saucepan.
  3. Simmer on low heat for about 30 minutes until the sauce begins to thicken to a brush-able consistency. The sauce will thicken a little more as it cools. Makes about 3 1/2 cups.
  4. Store the sauce in a covered container in the fridge. This sauce is also excellent on beef & pork.
  5. Cook the bacon in a skillet and drain. Set the bacon aside to cool. rnIn the same pan cook the chicken and onions until the chicken is no longer pink. Preheat the oven to 350u0b0F.
  6. Spray a 9 x 13 in. glass baking dish. Separate biscuit dough into 5 biscuits, then cut each biscuit into 8 pieces. Scatter onto the prepared pan and bake about 7 minutes. (Otherwise, they end up under cooked and doughy.)
  7. Combine chicken, bacon, and onions and peaches in a bowl. Pour the sauce over the mixture and add the biscuit pieces then gently toss together.
  8. Pour mixture into the prepared baking dish. Sprinkle with the cheese and bake 25-30 minutes. Garnish with parsley if desired.
