Chicken Salad Log
- 1 (8 oz.) pkg. cream cheese, softened
- 1/4 c. salad dressing
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. ground ginger
- 1/8 tsp. pepper
- 4 drops red pepper sauce
- 2 c. finely cut up cooked chicken
- 2 hard-cooked eggs, chopped
- 1/4 c. sliced green onions
- 3 green bell pepper rings
- 1 Tbsp. toasted sesame seed
- 3 Tbsp. chopped green onion
- 3 Tbsp. chopped ripe olives
- 3 Tbsp. chopped pimiento, drained
- Mix cream cheese, salad dressing, lemon juice, salt, ginger, pepper and pepper sauce.
- Stir in chicken, eggs and 1/4 cup green onions.
- Shape into log, 8 x 2-inches.
- Wrap and refrigerate until firm, about 4 hours.
- Cut bell pepper rings to make strips.
- Place strips diagonally across log, dividing log into 4 sections. Sprinkle sesame seed on one section.
- Repeat with
- 3 tablespoons onion, the olives and pimiento on remaining sections.
- Serve with assorted crackers.
- Makes about 4 cups.
