Blueberry Grown Up Grilled Cheese
- 2 pieces artisan bread
- 1 tablespoon butter
- 1 teaspoon Dijon mustard
- 1 handful arugula
- Thin slices of red onion, soaked in pickled blueberry brine
- 1/4 cup Bow Hill Organic Heirloom Pickled Blueberries
- 4 ounces chevre
- Splash Balsamic vinegar
- 1 pinch salt
- 1 dash pepper
- Butter slices of artisan bread, placing one into a skillet heated to medium.
- Smear Dijon mustard, and layer chevre, pickled blueberries, onion slices and arugula.
- Decorate with salt and pepper.
- Drizzle with balsamic vinegar.
- Close the sandwich with the other slice of bread, butter side out.
- Grill until golden brown, flip, and cook until berries squish and cheese melts.
- Cut in half and devour.
