Sausage Breakfast Quiche
- 2 (9-inch) Pie crust (not deep dish)
- 1 lb. sausage
- 1/2 c. chopped onions
- 1/3 c. chopped green peppers
- 8 oz. shredded cheddar cheese
- 4 eggs
- 2 heaping tsp. flour
- 2 tsp. dried parsley flakes-crushed
- 1 tsp. seasoned salt
- 1/2 tsp. pepper
- 2 cups lite cream or evaporated milk
- Heat oven 425 degrees.
- Bake pie shells about 7 minutes. Remove from oven and reduce heat to 350 degrees.
- In medium skillet brown sausage.
- Drain; reserve 2 Tbsp. fat.
- Cook onions and green pepper in fat until brown and tender.
- Stir in sausage.
- Spoon into pie shells.
- Sprinkle with cheese.
- In medium bowl beat eggs add remaining ingredients.
- Mix well.
- Pour over cheese and sausage mixture.
- Bake 30 or 35 minutes or until done.
