Chocolate Apple Galette

  1. In a bowl, stir together the flour, cocoa, salt and sugar. Add the butter, cold from the fridge, cut into small pieces. Work quickly to get a sandy mixture, don't worry if you still have some butter lumps. Add a tablespoon of ice water at a time and keep working until you get a smooth and elastic dough. Wrap in plastic wrap and place in the refrigerator to rest for about one hour.
  2. Preheat the oven to 200u0b0 C.
  3. Wash the apples and remove the core. Cut into thin slices, spraying with lemon juice to prevent oxidation.
  4. Place the dough between two sheets of parchment paper and roll it out in a uniform and circular shape, about 4 mm thick. Arrange the slices of apple next to each other forming a compact and circular design, leaving about 3 cm from the edge. Sprinkle the nuts and raisins mixture on top. Fold the edges inward, making small folds.
  5. Sprinkle the apple filling and dough edge with sugar.
  6. Bake in the preheated oven for 35 to 45 minutes, until it's golden and crispy. You can serve it while still warm with a vanilla ice cream scoop on the side (optional).
