Chocolate Apple Galette
- For the pastry crust
- 150 grams all-purpose flour
- 25 grams cocoa, unsweetened
- 4 teaspoons sugar
- 1 pinch salt
- 85 grams cold unsalted butter
- 4 tablespoons ice water
- For the filling
- 2 apples, not too ripe
- Juice of half lemon
- 2-3 tablespoons sugar
- 0.5 cups mixture of sliced almonds, pine nuts and raisins
- Vanilla ice cream to serve (optional)
- In a bowl, stir together the flour, cocoa, salt and sugar. Add the butter, cold from the fridge, cut into small pieces. Work quickly to get a sandy mixture, don't worry if you still have some butter lumps. Add a tablespoon of ice water at a time and keep working until you get a smooth and elastic dough. Wrap in plastic wrap and place in the refrigerator to rest for about one hour.
- Preheat the oven to 200u0b0 C.
- Wash the apples and remove the core. Cut into thin slices, spraying with lemon juice to prevent oxidation.
- Place the dough between two sheets of parchment paper and roll it out in a uniform and circular shape, about 4 mm thick. Arrange the slices of apple next to each other forming a compact and circular design, leaving about 3 cm from the edge. Sprinkle the nuts and raisins mixture on top. Fold the edges inward, making small folds.
- Sprinkle the apple filling and dough edge with sugar.
- Bake in the preheated oven for 35 to 45 minutes, until it's golden and crispy. You can serve it while still warm with a vanilla ice cream scoop on the side (optional).
