Chicken-Zucchini Stir-Fry
- 1 tsp. vegetable oil
- 2 c. boneless chicken, cut in pieces
- 3 medium zucchini, cut in thin slices
- 2 medium onions, cut in small pieces
- 1 stalk celery, cut in small pieces
- 1/2 tsp. black pepper
- 1/2 tsp. red pepper
- 1/2 c. Cheddar cheese
- Put the oil in a large skillet.
- Turn the heat to medium.
- Add chicken.
- Stir.
- Cover the skillet.
- Cook about 5 minutes.
- Add the zucchini, green peppers, onion and celery to the skillet.
- Stir gently until the vegetables are coated with oil.
- Cook until the chicken and vegetables are hot.
- Put the lid on the skillet.
- Turn the heat to low.
- Cook about 5 minutes.
- Cook until the zucchini is tender and firm.
- If the mixture gets dry, add a little water.
- If there is liquid in the skillet, cook with the lid off.
- Add black and red pepper.
- Stir gently.
- Cut cheese and place on top, if desired.
