Mama'S Blueberry Pound Cake
- 1 pt. blueberries, washed and drained well
- 2 sticks butter, softened
- 2 c. sugar
- 4 eggs
- 1 1/2 tsp. vanilla
- 3/4 tsp. lemon extract
- 3 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- Preheat oven to 325u0b0.
- Grease and flour a 10 inch tube pan. Use mixer to cream butter and sugar; add eggs one at a time.
- Beat well after each egg is added.
- Add flavorings and beat until fluffy.
- Dredge berries with 1/4 cup flour and set aside.
- Sift remaining flour with baking powder and salt.
- Fold into cake batter until well blended.
- Gently stir in berries.
- Bake for approximately 1 hour and 10 minutes or until cake test done with a cake tester.
- Place pan on rack and cool in pan for 10 minutes before removing from pan.
- Serves 12 to 16.
