Good Cookies (Oatmeal Cookies With Honey)
- 1/2 cup butter
- 1/2 cup sugar
- 1 cup brown sugar, packed
- 1/4 cup honey
- 2 eggs
- 1 cup flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups quick-cooking (not instant) oatmeal
- 1 package (12 oz.) chocolate chips
- 1 cup chopped walnuts or pecans
- 1 teaspoon vanilla
- Combine butter, sugars, vanilla, and honey. Beat well to cream. Beat eggs in one at a time. Stir in flour, salt, and baking soda. Stir in oatmeal. Mix well. Stir in chocolate chips and nuts.
- Drop by scant teaspoons on greased cookie sheets (or sheets lined with silpats). Bake in a preheated 350 degree oven for about 10 minutes.
- Note: rnFor the anti-nut, chocolate-obsessive version: eliminate the nuts; add equivalent in chocolate (though I have been known to double the amount of chocolate, that variation on the variation might be only for the truly chocolate-obsessed). As for the chocolate itself, you can use chocolate du choix --semisweet chips or chunks, any chocolate you like (chopped or cut in chunks), or any combination that suits you.
