Falafel(The Hot Dog Of The Middle East)
- 2 lb. dried chickpeas (garbanzos)
- 1 bunch fresh coriander or cilantro
- 2 Tbsp. ground coriander
- 1 tsp. cinnamon
- 1 tsp. white pepper
- 2 small hot chilies (optional)
- 2 onions
- salt to taste
- 1 tsp. cloves
- 1 tsp. nutmeg
- 1 Tbsp. baking soda
- Crisco oil for deep frying
- Soak chickpeas in water overnight.
- Drain; mix drained chickpeas and spices together, then grind very fine.
- Add baking soda and let the mixture rest for half an hour.
- Form into walnut size balls and deep fry in 350u0b0 oil.
- Drain well.
- May be eaten hot or at room temperature.
- Serve with Tahina Sauce (recipe follows) and chopped tomatoes.
- Must do ahead, time consuming.
- Can freeze.
