Banana Cheesecake Pudding
- 8 ounces whipping cream
- 1/4 teaspoon unflavored gelatin granules
- 4 ounces cream cheese
- 8 ounces mascarpone cheese
- 1/2 cup granulated sugar
- 2 very ripe medium bananas, mashed until very smooth
- 2 teaspoons pure vanilla extract
- 8 ounces sour cream
- Chopped toasted nuts of your choice (optional) ( I like macadamia )
- Place the whipping cream in a medium bowl and sprinkle the gelatin over. Whip the cream until stiff peaks form. Set aside in the fridge while you continue.
- In a medium bowl cream the cream cheese, mascarpone and sugar until very creamy. Stir in the mashed bananas, sour cream and vanilla until fully incorporated.
- Fold in the whipped cream and refrigerate for a few hours. Serve in small bowls garnished with nuts if desired.
