Beef Stroganoff
- 1 1/2 lb. lean steak
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. diet margarine
- 1 large can sliced mushrooms
- 1/2 c. chopped onion
- 1 can beef broth
- 1 tsp. dried mustard
- 2 Tbsp. catsup
- 1 Tbsp. flour
- 2 Tbsp. water
- 3/4 c. nonfat plain yogurt or nonfat sour cream
- Cut steak into 1/2-inch strips.
- Remove any fat.
- Pat dry with paper towel.
- Sprinkle with salt and pepper.
- Melt 1 tablespoon margarine in frying pan.
- Add meat; cook and stir until brown. Remove meat from pan; set aside.
- Cook onion and mushrooms in same pan until tender.
- Return meat to pan.
- Mix the broth, mustard and catsup; pour over meat.
- Cover; simmer for 1/2 hour.
- Make paste of flour and water; stir into pan.
- Cook, stirring constantly, until thick.
- Add yogurt or sour cream; do not boil.
- Serve over cooked noodles.
