Upstate Minestrone Soup
- 1 lb. Italian sweet sausage
- 1 Tbsp. salad oil
- 1 c. sliced carrots
- 1 c. diced onions
- 1 clove garlic, minced
- 1 tsp. dried basil
- 2 small zucchini (unpeeled), sliced
- 1 lb. 12 oz. can Italian pear tomatoes (undrained), chopped
- 3 beef bouillon cubes, dissolved in 1 1/2 c. boiling water
- 2 c. finely shredded cabbage
- 1 (1 lb.) can Great Northern beans (undrained)
- Slice sausage crosswise about 1/2-inch thick.
- In a large kettle, brown sausage in oil.
- Add onions, garlic, carrots and basil.
- Cook for 5 minutes.
- Add zucchini, tomatoes, liquid bouillon and cabbage.
- Bring to a boil.
- Reduce heat and simmer, covered, for 1 hour.
- Add beans and their liquid; cook another 20 minutes.
