Upstate Minestrone Soup

  1. Slice sausage crosswise about 1/2-inch thick.
  2. In a large kettle, brown sausage in oil.
  3. Add onions, garlic, carrots and basil.
  4. Cook for 5 minutes.
  5. Add zucchini, tomatoes, liquid bouillon and cabbage.
  6. Bring to a boil.
  7. Reduce heat and simmer, covered, for 1 hour.
  8. Add beans and their liquid; cook another 20 minutes.
