Fresh City Chicken Fingers & Sweet Potato Fries
- Chicken Fingers + Fries
- 16-20 ounces boneless, skinless chicken breast
- 3 eggs
- 2 cups gluten free bread crumbs
- to taste salt
- 2 pounds sweet potatoes
- 2 tablespoons olive oil
- Sweet Ginger Citrus Sauce
- 1" ginger, minced
- 3 tablespoons honey
- 2 tablespoons olive oil
- 0.5 teaspoons sea salt
- 0.5 teaspoons orange zest
- 1 orange, juiced
- Preheat oven to 375F
- The Chicken Fingers: rnSeason chicken with salt and set for at least 15 minutes.rnChop chicken into finger size stripsrnSet 3 eggs in a bowl and whisk until yolk and whites are well incorporated.rnIn a separate shallow bowl or plate, spread out gluten-free breadcrumbs.rnOne at a time, dip chicken into egg mixture, lift and allow to drip excess egg. rnPlace strip on bread crumb bowl and mix until fully coated.rnSet aside and repeat with all strips.rnPlace strips on a parchment lined pan and set in oven until cooked and browned (about 15-20 minutes)
- Sweet Potato FriesrnRinse and scrub sweet potatoes. rnChop ends off and slice potatoes into long thin strips.rnIn a large bowl, coat potato strips with olive oil and salt to taste. rnEvenly distribute potato strips on a parchment lined pan and add to oven. Cook until soft on the inside and crispy on the outside (about 30-35 minutes).
- While chicken and sweet potatoes are cooking, make the sauce:rnIn a small bowl, mix minced ginger, orange zest, orange juice, and honey until all ingredients are integrated. rnSet aside for dipping.
- When chicken is ready, remove from the oven to let cool. Repeat with sweet potatoes.
- Serve ingredients and enjoy!
