Applesauce-Pecan Bread
- 2 large eggs
- 1 c. canned applesauce
- 1 c. sugar
- 1/3 c. oil
- 3 Tbsp. milk
- 1 tsp. cinnamon, divided
- 1/4 tsp. nutmeg
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 c. all-purpose flour
- 1 1/4 c. chopped pecans, divided
- 1/2 c. mixed candied fruit
- 1/4 c. packed brown sugar
- Beat eggs until foamy.
- Stir in next 4 ingredients.
- Mix 1/2 teaspoon cinnamon and next 4 ingredients.
- Gradually add to first mixture, beat with spoon until well mixed.
- Stir in 1 cup nuts and the fruit.
- Spread in well-greased 9 x 5 x 3-inch loaf pan.
- Mix remaining nuts, cinnamon and the brown sugar.
- Sprinkle evenly on top of batter and press lightly with hand.
- Bake in preheated oven at 350u0b0 for 1 hour, or until done.
- To keep top from getting too brown, spread piece of foil over top during last 1/2 hour of baking.
- Wrap in foil and store in refrigerator, will keep about one week.
