Brunswick Chicken Stew
- 1 (2 1/2 to 3 lb.) broiler fryer chicken
- 1 Tbsp. salt
- 2 qt. water
- 1/4 lb. cooked smoked turkey, chopped
- 2 large onions, chopped
- 1 green pepper, chopped
- 2 Tbsp. chopped fresh parsley
- 1 (16 oz.) can tomatoes, undrained and chopped
- 1 (16 oz.) can whole kernel corn, drained
- 1 (10 oz.) pkg. frozen lima beans
- 1 (10 oz.) pkg. frozen sliced okra
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. thyme
- 1 bay leaf
- 1 1/4 tsp. hot sauce
- Combine first 3 ingredients in large Dutch oven; bring to boil.
- Cover, reduce heat and simmer 1 hour.
- Remove chicken from broth.
- Cool chicken completely, skin, bone and coarsely chop meat.
