Chocolate Zucchini Cake(This Is Different And Good.)
- 1/2 c. butter or margarine, softened
- 1/2 c. vegetable oil
- 1 1/2 c. sugar
- 2 eggs, lightly beaten or 3 egg whites
- 1/2 c. sour milk or buttermilk
- 1 tsp. vanilla
- 2 1/2 c. all-purpose flour
- 1/4 c. baking cocoa
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 2 c. shredded zucchini
- 1/2 c. chopped nuts
- 1/2 c. semi-sweet chocolate chips
- In a mixing bowl, cream butter, oil and sugar. Add eggs, milk and vanilla; mix well. Combine flour, cocoa, baking soda, baking powder, salt, cinnamon and cloves; gradually add to creamed mixture. Stir in zucchini. Spread into a greased 13 x 9-inch baking pan. Sprinkle with nuts and chocolate chips. Bake at 350u0b0 for 35 to 40 minutes or until cake tests done. Yield: 12 to 16 servings.
