Crab Mac & Cheese

  1. Sweat the shallot and garlic in butter.
  2. Deglaze with white wine.
  3. Add half and half and bring to a boil.
  4. Add iota carrageenan, xanthan and salt.
  5. Whisk in cheeses.
  6. Blend in batches on high for two minutes at a time, adjust.
  7. In a pan, sweat the garlic and green onions.
  8. Add lump crab meat and deglaze with white wine.
  9. Once the pan of white wine is reduced by about 80%, add the cheese sauce and heavy cream.
  10. Add pasta and old bay seasoning.
  11. Adjust seasoning with lemon juice and salt.
  12. Mix with cheese and enjoy!
