Barbecued Pork

  1. Cut boned pork loin in half lengthwise.
  2. (If tenderloin is thick,
  3. cut it in half and remove membrane.) Mix remaining ingredients, except oil, in a large bowl, stirring until sugar and salt
  4. aretearly dissolved.
  5. Add pork pieces stirring to coat well.
  6. Marinate
  7. 1tour or more.
  8. Then add 1 tablespoon oil
  9. (to give
  10. pork a shiny glaze.) Marinate at least 3 hours longer or overnight, turning pork occasionally.
  11. Place pork on a
  12. rack
  13. with roasting pan underneath to catch drips.
  14. (Add a small
  15. amount
  16. of water in bottom of the pan for prevent burning.)
  17. Bake
  18. at 425u0b0 for about 20 minutes.
  19. Reduce the heat to 325u0b0
  20. and
  21. continue roasting
  22. 30
  23. to
  24. 35 minutes turning pork occasionally.
