Barbecued Pork
- 2 to 3 lb. boned pork loin
- 3 c. sugar
- 1/3 c. salt
- pinch of Chinese allspice powder
- pinch of garlic powder
- 1 Tbsp. hoisin sauce
- 1 Tbsp. sherry
- 1/2 c. boiling water
- 1 or 2 drops red food coloring (optional)
- Cut boned pork loin in half lengthwise.
- (If tenderloin is thick,
- cut it in half and remove membrane.) Mix remaining ingredients, except oil, in a large bowl, stirring until sugar and salt
- aretearly dissolved.
- Add pork pieces stirring to coat well.
- Marinate
- 1tour or more.
- Then add 1 tablespoon oil
- (to give
- pork a shiny glaze.) Marinate at least 3 hours longer or overnight, turning pork occasionally.
- Place pork on a
- rack
- with roasting pan underneath to catch drips.
- (Add a small
- amount
- of water in bottom of the pan for prevent burning.)
- Bake
- at 425u0b0 for about 20 minutes.
- Reduce the heat to 325u0b0
- and
- continue roasting
- 30
- to
- 35 minutes turning pork occasionally.
