Cheeseless Cheesecake
- 20 oz. can crushed pineapple (in its own juice), drained (save juice)
- 2 pkg. unflavored gelatin
- 1/2 c. boiling water
- 1/2 c. pineapple juice
- 2 tsp. lemon juice
- 2 tsp. vanilla
- 4 pkg. artificial sweetener
- 1 1/3 c. dry milk (1 pkg. dry milk)
- rest of pineapple juice
- Place the following ingredients in a blender for 2 minutes: crushed pineapple, unflavored gelatin, boiling water and pineapple juice.
- Add the following ingredients to the blender and blend on high speed for 3 minutes:
- lemon juice, vanilla, artificial sweetener, dry milk and rest of pineapple juice.
- Pour into pie pan or 4 dessert dishes and refrigerate.
- Makes 4 servings with each serving equaling 1 cup of skim milk and 1 fruit.
