Cheeseless Cheesecake

  1. Place the following ingredients in a blender for 2 minutes: crushed pineapple, unflavored gelatin, boiling water and pineapple juice.
  2. Add the following ingredients to the blender and blend on high speed for 3 minutes:
  3. lemon juice, vanilla, artificial sweetener, dry milk and rest of pineapple juice.
  4. Pour into pie pan or 4 dessert dishes and refrigerate.
  5. Makes 4 servings with each serving equaling 1 cup of skim milk and 1 fruit.
  6. Enjoy!
