Ginger Chicken With Lime
- 1 c. dry white wine
- 1/8 c. lite olive oil
- 2 Tbsp. lemon juice
- 1 tsp. seasoned salt
- 1/2 tsp. white pepper
- 1 clove fresh garlic, crushed
- 2 Tbsp. or more finely grated or minced fresh ginger root
- 2 Tbsp. lime juice
- 2 large whole broiler-fryer chicken breasts, split and boned (turkey cutlets may also be used)
- lime wedges and parsley sprigs for garnish (optional)
- Remove skin from meat
- to
- reduce
- fat and calories.
- In small bowl, mix well
- oil,
- wine,
- lemontuice,talt, pepper, garlic, ginger andtime juice.
- Marinate chicken breast/turkey in mixture for one
- hour
- or
- more.
- Tuck
- edges under, forming compact shape about 1 1/2 inches thick.
- Place breasts in large shallow baking dish;
- pour
- half
- of
- remaining
- marinadetver chicken.
- Bake in preheated oven of 425u0b0, basting occasionally with pan drippings, about

- to
- 25
- minutestr
- just
- until chicken is opaque and juices run clear.
- Remove to warm plates; spoon drippings over chicken.
- Garnish
- with lime and parsley. Serve with baked rice and
- a
- green
- vegetable such as steamed fresh string beans, broccoli
- or
- zucchini
- and
- bakedterbed tomatoes.
