Super Bubble Loaf
- 1 pkg. active dry yeast
- 1/4 c. warm water (105~ to 115~)
- 1 c. milk, scalded (105~ to 115~)
- 1 egg
- 2 Tbsp. honey
- dash of salt
- 1 tsp. dried thyme leaves
- 3 1/3 to 4 c. flour
- melted butter
- In a large mixing bowl, combine yeast and warm water.
- Let stand for a few minutes.
- Add milk, egg, honey, salt and thyme. Add about 1 cup flour.
- Beat until batter is smooth.
- Gradually add rest of flour until a rather stiff dough forms.
- Turn dough out onto a lightly floured surface.
- Knead until smooth and elastic.
- Place in bowl.
- Cover.
- Let rise 1 hour.
- Punch down. Put on lightly floured surface; knead a few times.
- Divide in half.
- Cut each half in 8 even pieces.
- Shape in a small ball. Place 8 rolls in a greased loaf pan.
- Drizzle with melted butter. Repeat with other pan.
- Cover; let rise 30 to 40 minutes.
- Bake at 400u0b0 for about 40 minutes or until golden brown.
