Jalapeno Sausage Corn Bread

  1. Combine 1 cup corn meal, milk, eggs, salt, soda, bacon drippings and corn in a bowl; mix and set aside.
  2. Saute sausage until lightly browned; drain thoroughly and set aside.
  3. Sprinkle remaining corn meal in a greased 10-inch iron skillet; pour half of corn meal batter into skillet and sprinkle with sausage.
  4. Top with onion, then cheese.
  5. Add pepper evenly on top; pour remaining batter on top.
  6. Bake at 350u0b0 for 50 minutes or until brown.
