Spice Crusted Chickpeas With Mint Yogurt Sauce
- 1 can chickpeas washed + drained
- 2 tablespoons olive oil
- 1 medium white or yellow onion, chopped
- 15 chopped walnut halves
- 1 1/2 tablespoons chopped ginger
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon (use more if you want a slightly more sweet flavor)
- 1 teaspoon ground turmeric
- 1/2 teaspoon red chili flakes (adjust to preference of heat)
- 3 teaspoons cloves garlic, chopped
- 1 handful chopped fresh mint
- For Chickpeas-rnSaute onion until transparent on medium heat
- Add chopped garlic and saute with onion for approximately 1 minute
- In the center of the pan add 1 teaspoon of oil and to oil add cumin, turmeric, red chili flakes, chili power, cinnamon
- Mix and cook over high heat for another 5-6 minutes
- Add chopped ginger
- Add chopped walnuts
- Salt + pepper and fresh mint to taste
- For Yogurt Sauce-rnCombine yogurt, salt, pepper, garlic power and mint.
- Serve on top of chickpeas
