Chicken Pot Pie
- 1 can mixed vegetables
- 1 chicken
- 4 hard-boiled eggs
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1/4 c. chopped bell pepper
- 2 Tbsp. margarine
- 1/3 c. self-rising flour
- 1/2 tsp. garlic salt
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 large can biscuits
- 1 small jar pimentos
- 1/2 c. milk
- 3 c. chicken broth
- Cook chicken and let cool. Take meat off bones. Cook onion, celery and bell pepper in margarine until done, but not brown. Blend in flour, garlic salt, salt and pepper.
- Add 2 or 3 cups chicken broth and milk. Cook over low heat until thick enough for a sauce, then add vegetables and pimientos.
- Place chicken in bottom of baking dish. Slice eggs over chicken.
- Pour sauce over that.
- Place biscuits on top. Brush with margarine.
- Bake at 400u0b0 until biscuits are brown.
