Apple Pizza With Caramelized Onions And Gouda Cheese

  1. Preheat oven at 400
  2. Take your prepared pizza crust and with a rolling pin, start working towards getting a rectangle about the size of a cookie sheet. Place dough on the cookie sheet that has been lightly oiled using a pastry brush. You could, of course, make your own pizza crust.
  3. Thinly slice your onions and start caramelizing them with olive oil, salt, pepper and rosemary. This will take a good ten minutes to get them nice and caramelized. You could use yellow onions, but I find the red ones to be sweeter and a good match with the tart golden delicious apples.
  4. Speaking of apples, while the onions are caramelizing, start peeling your apples and slicing them as thin as you can.
  5. Spread onion mixture on your pizza crust
  6. Place apple slices on the onion mixture, try to not overlap them
  7. Top with shredded gruyere cheese
  8. Bake for about 20 to 25 minutes, depending on how crispy you like your pizza. I like mine very crispy so usually go to about 25 minutes, but start keeping an eye out at around 18, everyone's over is different.
