Toasted Chai Latte

  1. To make your tea mix just toast all of the spices separately in a dry frying pan on medium heat until fragrant and toasted. The cardamom will begin to pop, the cloves and cassia buds should produce a light smoke. Allow all the spices to cool.
  2. Combine in an airtight jar with sugar. This can sit in your pantry until whenever you're ready for a latte.
  3. To make your latte use a small saucepan filled with milk, tea bags and chai mix. Heat the mixture on medium-low heat while stirring occasionally until the latte looks deep tan in colour and steaming. Do not bring to a boil.
  4. Remove and discard tea bags and then strain your latte into a mug. Serve hot.
