Chili (One Pot Wonder)
- 1 tablespoon olive oil
- 1 pound organic grass fed ground beef
- 1/2 red onion, diced
- 2 tablespoons jalapeno pepper, finely chopped
- 2 garlic cloves, minced
- 16 ounces creamy tomato soup
- 16 ounces can white cannellini beans, strained & rinsed
- 16 ounces petite diced tomatoes
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon oregano
- 1 teaspoon chili powder
- 4-8 ounces shredded cheddar cheese
- 1 avocado, diced
- 1/2 cup sour cream
- Heat a large stock pot over medium heat, add the olive oil and onions, mix well.
- Cook for one minute, then add the ground beef breaking up with a wooden spoon.
- After a couple minutes add the jalapeno peppers and garlic, mix well.
- Continue cooking until the meat is done, then add the tomato soup, beans, diced tomatoes, and spices.
- Mix well and cook for a few minutes until flavors are blended.
- Spoon the chili into a bowl, and top with shredded cheese, a spoonful of sour cream, and diced avocado.rnGarnish with fresh cilantro.
