Basmati Rice Pilaf With Peas(Matar Pulao; Serves 8)
- 2 c. basmati rice, uncooked
- 1 Tbsp. butter or ghee
- 1 medium garlic clove, minced
- 1 cinnamon stick
- 2 green cardamom pods
- 1 tsp. salt
- 1 1/2 c. peas
- 1/2 c. blanched, sliced almonds
- 2 medium zucchini, thinly sliced
- 2 medium yellow squash, thinly sliced
- 2 tomatoes, thinly sliced
- 2 onions, thinly sliced
- 1/2 c. Italian-style bread crumbs
- 4 to 6 oz. grated Mozzarella
- milk
- oregano to taste
- rosemary to taste
- basil to taste
- red pepper to taste
- salt and pepper to taste
- Spray a large casserole with nonstick vegetable spray.
